Candied Yams

 3 Cups mashed yams

3 eggs

1 Cup sugar

1 tsp vanilla

1 Stick Butter melted

 

Topping:

1 Cup brown Sugar

1/3 Cup flour

1/3 Cup butter to drizzle

1 Cup nuts

 

Mix the yams, eggs, sugar, vanilla and melted butter together.  Place in an 8 x 8 pan.  Make topping with brown sugar, and flour.  Drizzle 1/3 Cup butter over the entire mixture and top with chopped nuts if desired.  Bake at 350 for 30 minutes.

Creamed Potatoes

6 or 7 potatoes


2 cartons of whipping cream

salt and pepper

 

Grate potatoes and place them in an 8 x 8 baking dish.  Pour whipping cream over potatoes and sprinkle with salt and pepper and garlic salt if desired.  Bake for one hour to one and half hours at 350 until golden brown.

Holiday Carrots


14-15 carrots
3/4 Cup mayonaise
1 TBS horseradish
1 TBS grated onion

Peel carrots, cut in half and in half lengthwise.  Cook until not quite done.  Place in an 8 x 8 casserole dish.  Mix remaining ingredients and pour over the carrots.  Sprinkle with grated sharp cheddar cheese - just enough to cover, and then cover that with buttered bread crumbs.  Bake at 350 for 30 minutes.

Baked New Red Potato Dollars

8 new red potatoes
1/4 c. butter
2 green onions, chopped include tops
Parmesan cheese
Scrub and dry potatoes, leave skin on. Cut each potato into 3/16 inch slices, keeping each potato intact (don't scatter slices). Butter a Pyrex loaf pan and sit potatoes upright (discard 2 round ends of each) in two rows in it. Melt butter, add onions and pour over potatoes. Sprinkle with Parmesan. Bake uncovered at 425 degrees for 1 hour. Reduce heat to 375 degrees and bake 30 minutes longer or until tender. Turn out on platter to serve. Serves: 6.

Oh folks - I just found the recipe on Sunday just to have a new way to have potatoes for just me and dad and OH BABY!! These are fantastic. bytheway - I didn't have green onions so I used freeze dried chives and they were still fantastic.

Carmelized Butternut Squash


Ingredients

Directions

  1. Preheat the oven to 400°F.
  2. Cut off the ends of each butternut squash and discard.
  3. Peel the squash and cut in half lengthwise.
  4. Using a spoon, remove the seeds.
  5. Cut the squash into 1 1/4" to 1 1/2" cubes (large and uniform is best), and place them on a baking sheet.
  6. Add the melted butter, brown sugar, salt and pepper.
  7. With clean hands, toss all of the ingredients together and spread out in a single layer on the baking sheet.
  8. Roast for 45 minutes to 55 minutes, until the squash is tender and the glaze begins to caramelize.
  9. Turn the squash while roasting a few times with a spatula to be sure it browns evenly.
  10. Adjust seasonings if needed.
  11. Serve hot.
  12. Enjoy!

My Love Affair with Red Potatoes!!

I have had a mid-life attachment to red potatoes. I don't know if it is totally the taste - but I do know that I love the recipes where I don't have to peel them. Here are two that are fantastic:
Red-skinned garlic mashed potatoes
What makes these so good is that you boil the potatoes after you quarter them (leave skins on!!!) in chicken broth. I just use a powder to flavor the water but it makes a big difference. Bring mixture to a boil. reduce heat, cover and cook for 20-25 minutes until potatoes are tender. Drain; reserving a little of the cooking liquid. Mash the potatoes with a masher or an electric mixer and you can add some or all of the following ingredients. 2 cloves roasted chopped garlic, 1/4 cup cream cheese, butter, sour cream and parsley, you can add milk or some of the cooking liquid - then salt and pepper to taste. They are wonderful.

Roasted Red Potatoes
This is my other new recipe that I use all the time. Preheat oven to 450 degrees. Scrub potatoes and quarter. Drizzle olive oil on baking sheet with sides. Place potatoes on baking sheet and sprinkle with salt and pepper. I just mix these ingredients with my hands in the pan so every potato has some oil on it. Bake with skin side up, flipping potatoes half way through baking so that they brown evenly and bake for about 30 minutes until they are fork tender.
