Easy Chicken Enchilada Casserole

 Ingredients


  • 20 ounces green enchilada sauce
  • 12 ounces salsa verde
  • 4 cups cooked shredded or chopped chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 14 white or yellow corn tortillas, cut in half
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • Fresh chopped cilantro

Instructions 

  • Preheat the oven to 350 degrees F. Lightly grease a 9X13-inch pan with cooking spray. Set aside.
  • Whisk together the enchilada sauce and salsa verde.
  • Toss the chicken with the garlic powder, onion powder, oregano, chili powder, cumin, salt and pepper.
  • Spread 1/3 of the sauce in the bottom of the prepared pan. Layer eight tortilla halves across the sauce (see pictures in the post for a visual). Sprinkle 1/3 of the cheese over the tortillas followed by 1/2 of the chicken. Drizzle with 1/3 of the sauce.
  • Layer another eight tortilla halves, 1/3 of the cheese, last 1/2 of the chicken, another 8-9 tortilla halves, remaining 1/3 cheese and remaining sauce.
  • Cover with greased foil and bake for 35-40 minutes. Uncover and bake another 10-15 minutes until bubbly and cooked through. Sprinkle with chopped cilantro. Let rest for 10-15 minutes (it will set up and be less runny as it rests) before serving.

Simple Perfect Enchiladas



Ingredients  

Sauce:

2 tablespoons canola oil

2 tablespoons all-purpose flour

One 28-ounce can enchilada or Mexican red sauce

2 cups chicken broth

1/2 teaspoon salt

1/2 teaspoon black pepper 
Meat:

1 pound ground beef

1 medium onion, finely chopped

1/2 teaspoon salt
Can Substitute chicken
The Rest:

Canola oil, for frying

10 to 14 corn tortillas

Two 4-ounce cans diced green chilies

1 cup chopped green onions

1/2 cup chopped black olives

3 cups grated sharp Cheddar cheese

Cilantro, for garnish


Directions



  1. For the sauce:
  2. In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
  3. For the meat:
  4. While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
  5. For the rest:
  6. In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
  7. Preheat the oven to 350 degrees F.
  8. Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
  9. Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
  10. Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.  Recipe and picture from The Pioneer Woman

Salsa Verde Chicken Casserole

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup sour cream
  • 1-1/2 cups salsa verde, divided
  • 8 corn tortillas (6 inches)
  • 2 cups chopped tomatoes
  • 1/4 cup minced fresh cilantro
  • 2 cups shredded Monterey Jack cheese
  • Optional toppings: Avocado slices, thinly sliced green onions or fresh cilantro leaves

Directions

  • In a small bowl, combine the chicken, sour cream and 3/4 cup salsa. Spread 1/4 cup salsa on the bottom of a greased 8-in. square baking dish.
  • Fry the tortillas to soften.  Layer with half of the tortillas and chicken mixture; sprinkle with half the tomatoes, minced cilantro and half of the cheese. Repeat layers with remaining tortillas, chicken mixture, tomatoes and cheese.
  • Bake, uncovered, at 400° until bubbly, 20-25 minutes. Serve with remaining salsa and, if desired, optional toppings.  Recipe and picture from Taste of Home

One-Pan BBQ Chicken Burrito Bowls



Serves 4
For the chicken and rice:
8 ounces Roma tomatoes (about 2 or 3), cored and coarsely chopped
1 cup low-sodium chicken broth
1 clove garlic, peeled and smashed
1/4 medium onion, coarsely chopped
3/4 teaspoon ground cumin, divided
3/4 teaspoon kosher salt, plus more for seasoning
1 tablespoon vegetable oil
1 cup long-grain white rice
1 bay leaf
1 1/2 pounds boneless, skinless chicken breasts or thighs, or mixture of both
To finish:
1 cup frozen corn kernels
1 (15-ounce) can black beans, drained and rinsed
3 tablespoons barbecue sauce
Optional toppings: Shredded cheese, chopped cilantro, sour cream, diced avocado, salsa, hot sauce, diced green onions, shredded lettuce, crushed tortilla chips
For the chicken and rice: Place the tomatoes, broth, garlic, onion, 1/4 teaspoon of the cumin, and 3/4 teaspoon salt in a blender and blend on high speed until smooth. Measure the amount of purée; you should have 2 cups. If you don't have enough, add more chicken broth or water.
Heat the oil in a large nonstick frying pan over medium heat until shimmering. Add the rice and cook, stirring occasionally, until the rice is fragrant and starts to crackle, 3 to 5 minutes. Add the tomato purée and bay leaf, stir to combine, scraping the bottom of the pan to loosen any stuck grains of rice, and bring to a boil. Meanwhile, season the chicken with salt and the remaining 1/2 teaspoon cumin on both sides.
Add the chicken to the pan, nestling it into the rice. Make sure all the rice around the edges is submerged in purée. Cover with a tight-fitting lid, reduce the heat to medium-low, and simmer undisturbed until the rice is tender and the chicken is cooked through, 15 to 20 minutes. Halfway through the cooking time, use a rubber spatula to push the rice at the edges of the pan into the simmering liquid so that it cooks evenly.
To finish: Remove the pan from the heat. Transfer the chicken to a clean cutting board, scraping off any stuck grains of rice back into the pan. Stir the rice, sprinkle the corn over it, then add the black beans over the corn in an even layer. Cover again and let sit undisturbed for 10 minutes for the corn and beans to heat through and the rice to finish steaming.
Meanwhile, when the chicken is cool enough to handle but still warm, cut it into bite-sized pieces. Transfer to a medium bowl, add the barbecue sauce, and toss to combine.
Stir the rice mixture to incorporate the beans and corn and remove the bay leaf. Taste and season with salt as needed. Serve with the chicken and toppings.

Chipotle Chicken Skewers with Creamy Dipping Sauce

Ingredients
    Chicken Skewers:
  • 2 1/2 pounds boneless, skinless chicken breasts (4-5 medium chicken breasts)
  • 1/4 cup packed light brown sugar
  • 2 tablespoons fresh cilantro, minced
  • 1 chipotle chile in adobo sauce, minced (scrape out the seeds before mincing to reduce spiciness)
  • 2 teaspoons adobo sauce
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 12 bamboo or metal skewers
  • Creamy Dipping Sauce:
  • 3/4 cup lowfat sour cream
  • 1/4 cup lowfat mayonnaise or Greek yogurt
  • 1/4 cup lime juice, from 2-3 limes
  • 1/8 teaspoon garlic powder
  • 2 tablespoons cilantro leaves, minced
  • 2 green onions, finely chopped
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
Directions
  1. Slice the chicken breasts into long, thin strips, about 1/2-inch thick. You should have right around 30 strips. In a small bowl, stir together the brown sugar, cilantro, chipotle chile, adobo sauce, salt, chili powder, garlic powder, and pepper. Toss the chicken with the brown sugar mixture coating all the pieces evenly. Cover the chicken (or place in a ziploc bag) and refrigerate for at least 30 minutes and up to 24 hours.
  2. For the dipping sauce, in a bowl, stir all the ingredients together. Cover the mixture and let stand at room temperature for 30 minutes until the flavors combine. Alternately, you can make the dipping sauce in advance and refrigerate for up to 2 days. Be sure to season the dipping sauce with additional lime juice, salt and pepper to taste before serving.
  3. 30 minutes before grilling, cover the bamboo skewers with water and soak. Skip this step if using metal skewers.
  4. Preheat an oven broiler or gas/charcoal grill. Weave two strips of chicken onto each skewer. Broil or grill the chicken for 5-8 minutes until cooked through, using nonstick cooking spray on a foil-lined pan if you are broiling. Serve immediately (if you broil, you may need to cook in batches) with the dipping sauce.
